In the early days, winery founder David Stare produced just a small amount from the famed Robert Young vineyard. Then, as the winery grew, so did production. Following fermentation, the wine is allowed to remain in contact with the skins for additional time in order to extract more color and flavor from the skins. This process is called maceration.
